Chia Pudding for the family

Hello Foodies,

Over the past few years we have been bombarded with eating more healthy and SUPERFOOD items. Well, after resisting for many years, i have decided to give it a go last year.

I must say i do not mind the Chia seeds as a pudding for breakfast. Beside its nutritional values (omega acid, iron and calcium) and richness in fibers, i do like the texture of it. I must say you need to give some complimentary flavour to make it another item for dessert  or for your breakfast. This recipe is my personal touch to this dish.

Try it and you will adopt it. It is fresh, filling, and you can adapt it with seasonal fruits, berries or even frozen berries.

No cooking required, just mixed it all and let is set.

    Making hte puddig. It takes 5 minute to make but at least 2 hours to soak.
  • Gather all your ingredients. Measure it all if you prefer.
  • In a bowl, pour the coconut milk.
  • Add the Chia seeds.
  • Add a pinch of salt.
  • Add a good squizz of Honey.
  • Add the vanilla essence.
  • Using a whisk, give it a good mix for 30 seconds.
  • Cover the bowl with plastic. Place in the fridge and let it soak for 2 hours minimum or over night.
  • Building the pudding... I always do them in a glass jar or glass. Remember you eat with your eyes so the visual is exciting
  • I am always keeping my good old glass jam jar. Place some chia pudding to 1/3 level of the jar. I like to build layers of texture and flavours.
  • Add some roasted almonds.
  • Add more chia seeds pudding.
  • Add 1 chopped strawberry.
  • Add a little bit of fruit sauce. I have a recipe coulis recipe on this website too.
  • Add more chia seeds pudding.
  • Add some walnuts.
  • Add a dash of coulis.
  • slice a strawberry and place it attractively for presentation.
  • Garnish with fresh mint of micro herbs and edible flower if you can.
  • Want to take it away to work? No worries. Place the lid on top and off you go.
  • Voila this simple, healthy, beautifull, tempting guilt free breaky or dessert. Bon Appetit. Frenchy.
