Banana, choc and walnuts Muffins

Hello foodies,

This recipe ia all about how to use your blemish bananas to make great little muffins. My co workers were pesting me to make use the bananas that were not looking as fresh as few days ago. really all they wanted is to have a good morning tea cake and not waste any food.

This recipe was for them and now for you. It is a great way to use older bananas and it is so easy to make

I hope you enjoy them as much as we did.. You can dismiss the chocolate or walnuts if you want. But it adds extra flavours and textures.

  • Preheat the oven at 180 C. Measure all your ingredients with a digital scale.
  • Use a sift and a large bowl under it. Place the flour and bi-carb togehter. The next photos are showing that i actually sift all at once.
  • Add baking powder and salt,
  • Add the cinnamon,
  • Add the nutmeg,
  • Sift everything together at once.
  • Add your soften butter into a mixing bowl. You can do that by hand or using a Mixer with a "Paddle" attachment.
  • Add the brown sugar to your butter once the butter is soft.
  • Mix it together at low speed. (Creaming method).
  • Add all your Bananas,
  • Mix togehter. Oh it looks like it splitted.... do not panic.
  • Add all the dry ingredients and mix again togehter at low speed.
  • Add the eggs.
  • Add the vanilla.
  • Keep mixing for 30 seconds, scrape the bowl well.
  • Add your chocolate drops,
  • Fold them with a rubber spatula.
  • Add the chopped walnuts.
  • Fold the walnuts too.
  • Prepare 12 muffins tins with muffins paper cups.
  • You can use a spoong to fill up the muffins tins. Personally i prefer a piping bag as it itis faster, easier, cleaner.
  • Fill up the muffins tins 1/2 way up the cavities.
  • Bake at 170C for 20 min and check with a skewer if they are baked properly. If the skewer comes out clean, they are ready to cool down on your bench.
  • Cool down in the tins first for 20 -30 minutes or untill it feels cool enough to remove them safely fron the tins.
